Beetroot and Orange Salad

This is one of my favourite combinations, the earthiness of beetroot with the tangy sweetness of orange, mmmmm

- 2 beetroot, cubed (peel it if you want, I didn't)

- 3 oranges, peeled, cubed and save any juice

- 200g fetta cheese, cubed

- 5 tablespoons of olive oil

-3/4 cup of walnuts

- 1 bunch of mixed herbs (I used 6 sprigs each of parsley, coriander and mint. Chives or spring onion are great for this recipe too), chopped

- salt and pepper to taste

 

Boil the beetroot for 10 minutes until soft. Set it aside for about 30 minutes to let it cool.

Once the beetroot is cooled, combine with all the other ingredients, not forgetting the orange juice.

If you can, leave it to sit for about 5 minutes before eating so the flavours can really get to know each other
